What you are looking at here is a butternut squash that I have peeled, cut in half, and about to scoop out all the seeds and stringy membrane, and cut into pieces.

I did the same to half a large onion.  I put all of that inn a big bowl, sprinkled on some sea salt and ground some fresh pepper on the pieces.  I think other spices that would be good on here are cinnamon or cumin.  I slowly poured on some olive oil and stirred it till all the pieces were LIGHTLY coated.

Pour all of this onto a pan that is lined with foil for easy clean-up.

Bake in a 350 degree oven for 20-30 minutes.  Till tender.

I loved this so much II ate it all...by myself...before I even thought to take a picture.

Now Trish, you say cubed squash and onions....me thinks you "forgot" to mention garlic. There are some great big cloves in your pic. I'm just sayin'... ( ^8
