I start with my pie crust recipe (archives) and roll out 1/2 the dough in a long rectangle. I used a big lid to cut out the circles for the cookie base and laid them on a cookie sheet pan.
Next, I put a light layer of caramel on each circle with an off set spatula. I took two Granny Smith apple, peeled and grated them. I squeezed out most of the moisture in the apples with my hand and placed in a bowl. Add 4 Tab. of sugar, sprinkling of flour, cinnamon, nutmeg (to taste). Stir well.
Take a heaping Tab. of apple mix and place in center of cookie bottom.
Roll out other half of dough (1/4 inch think) in same rectangle shape. I used a fancy roller/cutting tool that had a wavy edge to cut my strips. I wove the strips on the cookies for the tops. I then crimped the edges by pressing down lightly with a fork...all the way around each cookie.
Sprinkle top with a cinnamon/sugar mixture.
Baked in a 400 degree oven for 20 minutes or until nicely browned.
Great alone, warm or cool. Maybe add a scoop of ice cream and caramel sauce to take it over the top.
