Today, it is still snowy, but it is on it's way out. It gives me hope that by the end of the day it WILL be gone. Or at least there won't be much left.
That is what I love about living in Southern California. I live close enough to the mountains to see the snow, usually...but not so close I have to put up with it. That is how I like snow. I like it from a distance. A FAR away distance.
As this new year begins, I am hopeful for the outcome. I think about my resolutions. I resolve to lose some more weight...25 pounds would be good. 40 would be better.
I also resolve to MAKE MORE MONEY! AND pay off more bills.
The changes to me would be to ask for help when I need it. I have such a hard time with the asking.
My hopes would be to open a road-side stand to sell veggies and fruit. I would actually like to sell subscriptions to about 10 people who would like to have a box of fresh veggies/fruit every week for 20 weeks. I will be having access to several gardens and orchards this year and I think I could pull it off. It is what I have been working toward. Plus, being in the garden gives me such peace.
I have also been working on recipes. I know it doesn't show on here...but I have been. It is hard for me to post on here because of the way I do things. I blame it on working in restaurants for all those years. You have to hurry. AND I am fast! By the time I remember to get my camera I am mostly done cooking. Then it is hard for me to take pictures so you all can see.
Sorry for whining and making excuses. I pledge to stop that, too. It is much easier if someone else takes the pictures while I cook.
I have been working on making soup from a ham bone with potatoes. Just so you all know, I only like to make soup starting with my broth recipe. It has so much more flavor.
I also made some eggplant Parmesan. I tried it out on an Italian who challenged me that it might not pass his standards. He asked me to make more. Guess I passed. So I bought the supplies yesterday to make more. Now I just need to document it with pictures for here so you all can try it.
Yesterday I made these bran muffins that were a big hit. They have raisins, nuts, pineapple, carrots, apples, whole wheat flour, and sour cream in them. I have this dump and taste technique that I use that works out for me. It had a cup of brown sugar in it, but it made 18 large muffins.
I have access to some excellent honey and fresh eggs too, so I hope to use them. What a lucky Girl I am.
I try to test out my recipes on a bunch of people first, so that I am sure it meets MY standards. I get these 'ideas' about recipes, but sometimes they work better in my head. So I test them out, till I get it just right.
I also want to make some cheese grits...it was a request...sort of. So I read a bunch of recipes to get the feel of it and then put my 'twist' on it.
That is how I have cooked all my life. I read recipe books like other people read novels. Then, when I cook, if I don't have something, I can substitute an ingredient I saw in another recipe. It is how my brain works. My problem-solving process.
I have been working on making collard greens. Bacon, onions, garlic, MY broth, salt and pepper, and some vinegar. I just need to see what kind of vinegar...first. Apple cider, rice wine, white, or balsamic. I have tried the first two.
Other recipes I have been trying were cheese balls, Rumaki, liver and onions, and some olive and bacon appetizers. Quick, tasty treats to serve guests.
I know liver is not on a lot of peoples 'favorites' list...but I love it. AND...I think I can get a few converts if they would just trust me. The trick with liver is not to cook it too much (more like a steak, time-wise) and to soak it in something first to take out that strong taste. Soy sauce, milk, and wine are just a few soaking elements that work good.
Maybe I should go eat breakfast...since I have food on the brain. Let me know if there is something you would like me to try out. I work better on a mission.
Anyway...I need to eat, get cleaned up so I can go on a road-trip this morning. Maybe I can get a few good pictures while I am out. Hope you all have a wonderful morning.
